Taste some of his amazing dishes inspired by the fantastic local produce from our area.
Dylan's style is to forage & create simple yet elegant dishes.
Tantalise your tastebuds with:
- Karuah River oyster with champagne granita and onion wafer
- Kingfish with avocado, cucumber pickle and puffed rice
- Redgate Farm quail with mushroom, egg and blackberry
- Lamb shoulder encripette with pea puree, eschallot and lamb crackle
- Kangaroo loin ans sausage with beetroot, basil and wattle seed
- Poached pear with jelly, bay leaf custard and macadamia nuts
